Lemon your cake recipe

Place 4oz butter and 1 cup of caster sugar in a bowl and beat until light and fluffy. Add 2 beaten eggs.Stir in 1 cup of plain yogurt, 3 tbs lemon juice and 1tbs lemon rind, 2.5 cups of self raising flour and 1.5 tsp of baking soda. Spoon mixture into a greased 9inch round cake tin and bake in a preheated oven 180 c/ 350 f oven for 45 minutes or until cooked. To make the syrup place one third cup sugar,half cup of water , 3 tbs lemon juice and rind of 1 lemon in a saucepan. Cook stirring over low heat until sugar dissolves.Simmer for 4minutes then immediately pour syrup over cake while it is hot in the tin. Allow the cake to stand  for 5 minutes  and serve with a dollop of yogurt. Very yummy and easy to make, recipe taken from ‘the new cook ‘ by Donna Hay
