Caramelised onions, chick peas,feta and mint

Heat 3 tbs of olive oil in a pan. Add 1 diced red chilli ( or a quarter of tsp of lazy chills or more depending on the  heat you want)  2 sliced red onions, 4 cloves of garlic ( crushed) and 2 tsp of sugar. Cook very gently for 15 minutes, stirring frequently. Add 3 fl oz  red wine vinegar ( I add less –  half what the original recipe says) and cook until the vinegar has evaporated. Add 7 oz crumbled feta, 1 x  14 oz tin of drained chick peas, and a handful of fresh mint leaves. Season  and leave to stand for 15 minutes, or eat straightaway depending how hungry!   Lovely with a salad or stuffed in a pitta bread. Taken from ‘Lunchbox’  by Amanda Grant
